Ingredients
  

  • 1 lb Italian sausage
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup ditalini pasta optional
  • 2 cups spinach or kale optional
  • Salt and pepper to taste

Instructions
 

  • Brown the sausage in a large pot, then remove and set aside.
  • Sauté onion until translucent, then add garlic and cook until fragrant.
  • Deglaze with chicken broth and bring to a simmer.
  • Stir in cream and Parmesan cheese, ensuring it melts smoothly.
  • Return sausage to the pot, add pasta if using, and simmer until pasta is tender.
  • Season with salt and pepper, and stir in optional greens in the final minutes.
  • Serve hot, garnished with fresh Parmesan or parsley.

Notes

  • For a gluten-free version, use gluten-free pasta or omit it entirely.
  • Adjust thickness by adding more chicken broth if needed.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
