- 1 cup quinoa
- 2 cups water or broth
- 1 red bell pepper chopped
- 1 zucchini sliced
- 1 small onion chopped
- 2 garlic cloves minced
- 2 tbsp olive oil

Rinse quinoa and cook in water or broth until fluffy.
