- 1 lb lean ground beef
- 1 can Rotel diced tomatoes & green chilies
- 1 can black beans drained and rinsed
- 1 cup corn fresh or canned
- 3 cups chicken or vegetable broth
- 1 packet taco seasoning
- Optional toppings: avocado shredded cheese, sour cream, tortilla strips
Cook ground beef in a skillet with taco seasoning until browned.
Combine beef, Rotel, beans, corn, and broth in a pot. Simmer for 10 minutes.
Cool to room temperature, then chill in the refrigerator for 2+ hours.
Serve cold with your favorite toppings.
